Hello domestic Gods and Godesses of Sanctum Zone. :flower:

I have billions of onions. There must be interesting recipes to use them up? So far, I'm thinking soups and stews, but does anyone know of anything more exciting? There must be a few secret chefs on this forum, so don't hide your light under a bushel. :)

If you cut the roots off of the bottom of the onion and let it stand for a few seconds before peeling it, you won't get the tears associated with peeling one.

We grow our own and then string them together to hang, we find they have a much better flavour this way.

Don't know if we have a recipe thread but it reminded me of this.

Pasta sauce, of course. :coffee:

Dice and brown an onion or 2 in a pan with a little olive oil, salt and pepper, then add ingredients of your choice...herbs and spices, tomato sauce and/or tomato pieces, and optional beef mince, or whatever you like...and water to bulk it up...simmer and stir thru some pasta of your choice.

You can also use onions on homemade pizza, gyros :gyro: , hamburgers and steak sandwiches. whether you cook them or not first for the last 3 depends on your tastes.

Or in small bread roll sandwiches, cut bread roll in half, fill with tomato, cheese, lettuce, broken up raw onion slices/slivers or whatever u call it, drizzle of olive oil, add some sliced meat or chicken if you like, even some pitted black olives, and a sprinkle of pepper.

I'll dig out some recipes later - there's a nice one where you stuff the onions with cheese & bacon, and I'll look up the sate sauce one which has raw grated onion as its base (yet my daughter who refuses to eat onion in any form scoffed the lot when I made it, 'cause she didn't know that :D ).

When I was little, my gran used to peel a whole onion, cut a deep cross down it (opposite the root end so that it stays in one peice) boil it till soft, then serve it with lots of butter, salt, pepper & vinegar. Sounds weird, but I liked it!

When roasting pork or beef I always chop an onion in half (skin left on) & sit the meat on it in the roasting pan - sometimes do the same with a whole garlic bulb & chuck a couple of big rosemary sprigs in out of the garden. When you strain the meat juices for gravy at the end, it's jolly delicious.

ONION WINE

1/2 lb / 225 grams onions
1/2 lb / 225 grams potatoes
1 lb / 450 grams raisins
2 1/2 lbs / 1,100 grams granulated sugar
1 teaspoon acid blend
Wine yeast
1 teaspoon yeast nutrient / energiser
8 pints / 1 gallon water
1 campden tablet

N.B. Onion wine is a very pleasant, refreshing wine and does not taste of onions!

METHOD - WHAT TO DO

Peel and finely chop onions and potatoes, adding to pan of boiling water. Simmer for around 20 minutes and then strain the onion and potato water into a winemaking fermentation vessel, being sure that all of the juice has been extracted from the vegetables. Top up the onion wine liquor to make 8 pints / 1 gallon, using boiling water. All of the other ingredients can be added at this stage (roughly chop the raisins), except for the winemaking yeast. Stir well to make sure that all of the sugar is completely dissolved into the onion mixture.

When the water has cooled to room temperature, add activated wine yeast and then stir every day, in the morning and evening, for four days. Strain thoroughly and pour fermenting onion wine 'must' into sterilised demijohn, with airlock. Rack the onion wine for the first time and three weeks, and then twice more, and three-monthly intervals. Bottle the onion wine at 12 months, by which time the wine clarity should be good, and the fermentation should have completely ceased. Onion wine benefits from standing for at least six months before drinking.

Onion rings are great made with Panko crumbs.

When I was camping, we wrapped a whole onion in foil and put it on the edge of the fire along with separately wrapped French rolls. When the meat was done, the onion had turned all mushy and we spread it on the hot, crusty rolls! Yum!

Master Tonic is supposed to be a great "cure all". Chop up equal parts onion, garlic, ginger, horse radish root, the hottest hot peppers you can find- I feel like I'm leaving something out- and then you put it into a huge jar, fill with raw apple cider vinegar. Put it in a pantry/closet and shake it every day for 2 weeks. You start on the New Moon and end on the Full Moon, I believe. Anyway, then you strain the pulp(my friend and I cooked burgers with it), and you take a couple of teaspoons a day for good health. I've been meaning to make some!

Also, my mom has a great onion salad dressing recipe that is great on spinach salad. I'll get it from her and post it later.

if you've got a whole bunch of them, like you wont use them up any time soon, dehydrate some and/or jar them...then you can use them as you need onions or want them and wont have to feel like you gotta use them.

i like to toss em in a pan, sliced, with olive oil or coconut oil with other vegetables (garlic, peppers, etc...) and cook until tender and you can almost see thru em, then put them over a steak. or alternatively, chopped them into small bits (with the vegetables i listed above) and pan fry them in an iron skillet so i dont have to worry about burning the pan until their almost burnt, they turn crunchy, then put it over the steak and potatoes with a beef gravy...adds a slightly diff texture to stuff.
also like to toss them in a pan with garlic, peppers (green, red, yellow, orange), potatoes and whatever else i have on hand, cover it in olive oil or coconut oil and pan fry until everything is cooked, then season with spices...we do this for breakfast a lot around here because it only takes one pan and is easy (can walk away from it for a few minutes without worrying).

and while i am too lazy to get u the recipes right now, you can do a french onion dip with them, creamed onions, a blooming onion, braised chicken and onions, grilled onion salad, caramelized onions, peperonata... basically you can just toss them in whatever your making, either pre-cooked or not.
