Personally i think the dragon is an allegory (if that's the correct word.)

I believe it stood for the pre Christian Roman Empire.

St George was an officer in the Roman army but also a Christian,the Emperor of Rome at this time was Diocletian who followed the traditional Roman religions and persecuted Christians.

It was the year 302, A.D. when Diocletian issued the edict ordering the arrest of every Christian soldier in his army. Saint George, using the courage of his faith, faced the Emperor to loudly renounce the edict. In front of his fellow soldiers, Saint George proclaimed himself a Christian and declared worship only to Jesus Christ.

St George tore down the Emperor's decrees as they were posted in Nicomedia.

The Emperor offered money,land and slaves to St George if he would convert from Christianity,he chose not to.

The Emperor Diocletian had St George killed.

The Draco/Dragon was a symbol used by Rome.

The legend of St George slaying the dragon is symbolic of him turning down the offers to convert to the Roman religion and staying true to his Christian faith.

The Locke Ness monster is a "dragon".......

There are lake monsters in Ireland....and the USA....

I've read that there was a lake monster in England long ago that somebody killed...........although Humanspirit could easily be right about George .....

I've read before of the dragon / serpent being symbolic of occult (as in secret) knowledge. So when the serpent tempted Eve to eat the apple, it was really a lust for forbidden knowledge that was the downfall of mankind, because with knowledge comes a lack of innocence. Summat like that anyway.
