I'm currently listening to a Betty Neels book on audio - she's a food pron-ist extraordinaire! However, she's outdone herself this time! There's more eating than plot in this one! The heroine is built along "Juno-esque lines" (to qoute the author), and seems to eat more in a day than I do in a month! I've just left her sharing a lobster mousse with the hero!

A toasted burrito to all of you.

I made this for my lunch yesterday. This is my zuchini pasta with savory sauce simmered with ground turkey and Italian seasonings. I took one small zuchini and cut into julienne strips as noodles. They are very tasty! To me its actually better than pasta and much more healthier, especially for low carb folks.

I made this for my lunch Sunday. It is my Thai green chicken curry with bamboo shoots, Thai eggplant and chilis.

Hey Steevo! I make this dish slightly different sometimes by adding different vegetables. Like yesterday, I used snow peas instead of bell peppers. Sometimes I quarter a tomatoe and add them when stir-frying.

You are right, its a pretty simple stir-fry. I used red and green bell peppers, yellow onion, Thai red chilis and Thai basil. I first sauteed about teaspoon each of minced garlic and ginger then added the onions and chicken pieces in peanut oil. Then after the chicken was cooked, I added all of the remaining ingredients and stir-fried them together with Thai black soy sauce which is very thick and sweet (not the same as Chinese style, very different) and a bit of fish sauce to taste. The Thai basil leaves, the highlight of the dish, are added just the last minute of cooking them all is served over a nice bed of jasmine rice. Ofcourse you can use typical long grain but to me the aroma of the jasmine rice and flavours tend to go nicely.
